Cut the aubergine into 8 slices of around ½ cm thick. Coat the slices with olive oil and sprinkle salt and pepper on top. Grill or bake them until they are soft and well cooked. Cut the figs through the middle and get rid of the hard stems. Lay the aubergine slices on a plate, share the rocket out on top and put a half-fig on each aubergine slice. Then put cocktails sticks in each portion, and sprinkle with honey and Old Amsterdam.
